F-centers, or Farbe centers ("Farbe" is the German word for "color"), form when an electron gets trapped in a hole in a crystal lattice. The electron is now essentially a particle in a box, and therefore has discrete allowed energy states. The oscillation of the electron produces a characteristic color. Heat treatment releases electrons from the traps back down the energy barrier, so the color reverts to its "true" color.
